Zoodles with Turkey Meatballs and Marinara

Ingredients:

  • 6 oz ground turkey (lean protein)

  • 1 egg white

  • 2 tbsp grated Parmesan cheese

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • Salt and pepper to taste

  • 1/2 cup low-sugar marinara sauce (I prefer Rao's)

  • 2 medium zucchini, spiralized into zoodles

  • 1 tbsp olive oil

  • Fresh basil for garnish (optional)


Instructions:

  1. Prepare the Meatballs: In a bowl, mix the ground turkey, egg white, Parmesan, garlic powder, onion powder, salt, and pepper. Form small meatballs.

  2. Cook the Meatballs: Heat 1 tbsp olive oil in a skillet over medium heat. Add meatballs and cook for 6-8 minutes, turning occasionally until fully cooked through.

  3. Heat Marinara: Heat the marinara sauce over medium-low heat in a separate pan.

  4. Cook the Zoodles: Lightly sauté the zucchini noodles in a skillet for 2-3 minutes.

  5. Assemble: Serve the turkey meatballs over the zoodles, top with marinara, and garnish with fresh basil.
