The aroma of freshly baked bread is undeniably one of the most comforting scents in the world. It evokes memories of family gatherings, Sunday brunches, and cozy mornings. For me, whole-grain bread holds a special place in my heart. It's wholesome, packed with nutrients, and embodies the essence of home baking. Today, I want to share with you my cherished recipe, along with some insights into the joy of baking with whole grains.

Recipe:


Ingredients:

- 3 cups whole grain flour (a mix of wheat, barley, and oats)

- 1 packet of active dry yeast

- 1 1/4 cups warm water

- 2 tablespoons olive oil

- 1 teaspoon salt

- 1 tablespoon honey or maple syrup

- Mixed seeds for topping (optional)


Instructions:

1. Activate the Yeast: In a bowl, mix the warm water with the honey. Sprinkle the yeast and let it sit for 10 minutes until frothy.


2. Prepare the Dough: In a large bowl, combine the flour, salt, and olive oil. Pour in the yeast mixture and mix until a dough forms.


3. Knead: Transfer the dough to a floured surface and knead for 10 minutes until smooth and elastic.


4. Rise: Place the dough in a greased bowl, cover it with a cloth, and let it rise for 1 hour or until doubled in size.


5. Shape and Second Rise: Punch down the dough, shape it into a loaf, and place it in a greased loaf pan. Cover and let it rise for another 30 minutes.


6. Bake: Preheat the oven to 375°F (190°C). Brush the top of the loaf with some water and sprinkle mixed seeds. Bake for 30-35 minutes until golden brown.


7. Cool: Remove from the oven, and let it cool on a wire rack before slicing.
