Thick & Creamy Instant Pot Greek Yogurt

What started as a simple experiment is slowly becoming part of my weekly meal prep routine. There is something satisfying about turning a gallon of milk into rich, creamy yogurt with just a little patience and the help of an Instant Pot.


Not only is homemade yogurt economical, but it also allows you to control the ingredients and customize the thickness to your liking. I prefer a thick Greek-style yogurt, so I strain mine overnight, sometimes up to 24 hours.


Why Make Yogurt at Home?

Homemade yogurt is:

  • Budget-friendly

  • High in protein

  • Easy to customize

  • Free from unnecessary additives

  • Delicious for breakfast, snacks, smoothies, and baking


Once you make a batch, you may find yourself reaching for homemade yogurt instead of store-bought.


Ingredients

  • 1 gallon whole milk (preferred)

  • 2 tablespoons plain yogurt with live active cultures


A Note About Milk

Whole milk produces the creamiest yogurt, but 2% milk works well too. I don't recommend 1% or fat-free milk because the finished yogurt tends to be much thinner and less creamy.


For this recipe, stick with dairy milk, such as cow's milk, for the most reliable results.


Instructions

Step 1: Heat the Milk

Pour the milk into the Instant Pot insert.

Press the Yogurt button until the display reads Boil. Allow the Instant Pot to heat the milk completely.


Step 2: Cool the Milk

When the boil cycle is finished, remove the lid and allow the milk to cool to approximately 110°F.

A thermometer is helpful, but if you don't have one, the milk should feel warm but not hot.


Step 3: Add the Starter

Place the yogurt starter in a small bowl.

Add about one cup of the cooled milk and whisk until smooth. Pour the mixture back into the Instant Pot and gently stir.


Step 4: Incubate

Replace the lid and press the Yogurt button again.

Set the incubation time for 8 to 12 hours.

  • 8 hours for a milder yogurt

  • 10 to 12 hours for a tangier flavor


Step 5: Chill

Transfer the yogurt to the refrigerator and chill for at least 4 hours.

At this point, you'll have traditional yogurt.


How I Make Greek Yogurt

After chilling, I strain my yogurt overnight to create a thick Greek-style texture.

I place a colander or sieve inside a slightly larger bowl. Then I line the colander with either cheesecloth or a thin, clean dish towel, making sure the cloth comes up the sides.


Next, I spoon the yogurt into the lined colander and fold the excess cloth over the top to cover it.


The whey drains into the bowl underneath while the yogurt thickens in the refrigerator.


I typically strain mine overnight, but occasionally leave it for up to 24 hours for an extra-thick yogurt.


Adjusting the Thickness

One of the benefits of homemade yogurt is that you can easily customize the consistency.


If your yogurt becomes thicker than you'd like, simply stir a small amount of the reserved whey back into the yogurt until it reaches your preferred texture.


Don't Waste the Whey

The liquid that drains from the yogurt is called whey. It contains protein and nutrients and can be used in many ways around the kitchen.

Try using whey:

  • In smoothies

  • In homemade bread

  • In pancakes or waffles

  • In muffins or biscuits

  • In soups and stews

  • In marinades

  • In oatmeal

  • In mashed potatoes

  • In salad dressings

  • In compost


Yield

Because I strain my yogurt overnight, my yield is lower than regular yogurt.

One gallon of milk typically gives me:

  • 8 jars

  • 6 ounces per jar

  • Approximately 48 ounces of thick Greek yogurt

The longer you strain, the thicker the yogurt becomes and the lower the final yield.


Serving Suggestion

My favorite way to enjoy homemade yogurt is simple:

  • 6 ounces of homemade Greek yogurt

  • ½ cup fresh strawberries or mixed berries

  • 1 teaspoon chia seeds


If you'd like it sweeter, add a drizzle of honey or molasses.


The berries add natural sweetness, while the chia seeds provide texture and fiber.


Final Thoughts

Making yogurt in the Instant Pot is surprisingly simple, and most of the process is completely hands-off. With just a gallon of milk, a little starter yogurt, and some patience, you can create thick, creamy Greek yogurt right at home.


There is something rewarding about taking a basic ingredient and turning it into a wholesome staple for your family. For me, homemade yogurt is quickly becoming one of those kitchen traditions worth keeping.
